Chicken Ghee Roast Masala is used to prepare chicken ghee roast which is a traditional recipe from the kitchen of Mangalorean households. A combination of succulent pieces of chicken marinated and cooked in rich ghee.
Ingredients: Red chilies, coriander, Jeera, salt, and natural spices.

Instructions
Wash and clean 300g chicken and cut them into medium-sized pieces.
In a mixing bowl take 3 tbsp curd, � tsp turmeric powder, � tsp red chilli powder, and � tbsp lemon juice and mix well.
Add the chicken pieces to the marination and mix well.
Give the chicken around 30 minutes to marinade.
Heat a deep-bottomed pan and add 3 tbsp ghee as it heats add 1 sprig of curry leaves, 4 finely chopped garlic cloves, and fry well.
Add the marinated chicken and mix well. Add salt if needed, salt is generally present in the ghee roast masala.
Cover and cook for 5 to 10 minutes on medium flame.
Add 2 tbsp chicken ghee roast masala and mix well.
Now add 1 tbsp tamarind paste and mix well. If necessary, add water to change the consistency. Add salt if needed.
Cover and cook for 15 to 20 minutes on low to medium flame until ghee starts releasing from the ghee roast.
11. The mouthwatering chicken ghee roast is ready to serve.
